Fourth of July is traditionally a time to come together with family and friends and celebrate Summer with a nice side of fireworks.
Which is pretty much how we spent our Fourth of July: Cool champagne partnered with floating berries, giggling children and a long evening of unwinding in a sweet smelling garden with friends.
I personally have mixed feelings about the Fourth of July. I am not overly patriotic, though I am appreciative of living in a country who's core values are based on freedom and equality for all human beings. Despite our conflicts on the issue of what is considered equal, we can always turn to those unique words, "all men are created equal", declared on our Independence Day and feel proud to be apart of that ideal.
Gilled Peaches, Mozzarella and Arugula Salad
- 2 peaches
- 8 oz arugula
- 1 handful of pine nuts
- 1 package of fresh mozzarella, sliced
- Drizzle of Balsamic Vinaigrette
Slice peaches and toss onto a prepared grill. They cook quickly so it is best to prepare this salad after all your meat or bigger vegetables are already done.
While your peaches are grilling mix together your lettuce with the arugula.
Once peaches are brought back from the grill lay them gently on top of the arugula mix, add the pine nuts and drizzle with your favorite Balsamic Vinaigrette.
Serve immediately and enjoy!
And, at the end of the day everything is pushed aside for fireworks both big and small. For us they were mainly small but the kiddos were beyond delighted!
